Cherry blossom vinegar

Cherry blossom vinegar is a Traditional Japanese rice vinegar combined with the sweetness of Sakura cherry blossom. Handpicked in April the blossoms are steeped in vinegar for 6 months to deliver a wonderfully floral flavour and aroma.

“Fresh wasabi......the original stuff. Fresh wasabi from Japan is so highly prized it doesn’t leave the country, so the powdered wasabi we so often find is just English mustard powder, mixed with green colouring. You will be blown away by its strength!”
Our fresh wasabi is grown in natural, mineral-rich water on our Dorset and Hampshire farms. The prized rhizomes take at least 18 months to reach harvest. Fine grating breaks down the wasabi at a cellular level instigating an enzyme reaction that delivers an aromatic, fresh flavoured pungency with a natural sweetness.
Fresh wasabi is classically paired with sushi and sashimi. Versatile in the extreme fresh wasabi can also flavour dressings, butters, sauces, ceviches, gravadlax, sorbets, foams and freshly grated will accompany meat or fish.

High quality vinegar fermented in Japanese cedar casks and seasoned with 100% natural kombu seaweed, bonito fish flakes, amazake and mirin.
Tosazu is high quality fermented vinegar seasoned with all natural foods: real bonito soup stock, kombu seaweed, honjozo shoyu (soy sauce) and hon mirin.

Tagorashi spice mix is full of that umami flavour we all crave, fantastic for seasoning fish and meat, or adding a kick to any broth or stir fry.
Ingredients / Allergens: Re peppers, yuzu peel, black sesame, seaweed, sansho, hemp seeds , poppy seeds.
Red miso gains its dark colour from the longer fermentation time and addition of the richer colour barley.
Excellent for a traditional, flavour full miso soup this miso can also be used to marinate meat, fish and vegetables and can be added to any soup where a rich umami flavour is called for.

Wasabi tobiko is an essential ingredient for your sushi. With its fine green colour and punch from the wasabi, this fish roe will add flavour and punch to any dish.

The unique, tart flavour of fresh yuzu combining lemon, mandarin and grapefruit balances exceptionally well with this mild mustard. Enjoy with cheese, fish or white meats. Add to sauces and dressings for an original burst of citrus that is both surprising and moreish.

White soy sauce
Shiro murasaki white soy sauce is distinguished by its pale color which allows it to be used as a rich soy seasoning without darkening the colour of the dish in the same way as a traditional soy sauce. Use to seasons stocks, broths, noodles, braised vegetables, seasoned rice, stir fries etc..
This soy sauce can still change color when cooked at high temperature (the amino acids together with the natural sugar in the soy sauce will brown) After opening it can also darken with natural oxidisation.
Keep refrigerated if you want to preserve its pale color but rest assured you can continue using even if the color darkens.
